These bite-sized snacks are loaded with warm spices and punchy candied ginger. They are an excellent-energy-boost for all hours of the day!
Makes about 32 snacks.
1 1/2 cups medjool dates (pits removed)
1/2 cup raisins
3 carrots, shredded (about 1 cup)
3/4 cup raw cashews, chopped
1 cup old fashioned oats
2-3 pieces candied ginger, chopped fine
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
1 tsp vanilla extract
Pinch of salt
1/2 cup unsweetened, desiccated coconut for rolling
Add dates, raisins, carrots and cashews to the body of a food processor. Pulse until the mixture starts to clump up along the sides. Scrap down the sides of the food processor and add the oats, candied ginger, cinnamon, nutmeg, ground ginger, vanilla and salt. Pulse until just combined.
Move the mix to a bowl, and additionally stir to combine. Place the desiccated coconut in a separate bowl. Using a small scoop, portion out the energy bites and roll them in the desiccated coconut to finish.
Store the Carrot Cake Bites in the refrigerator for easy snacking, placing a piece of parchment paper between layers to prevent the bites from sticking to each other.
